What is Enoki?

Enoki (Flammulina velutipes), also known as the velvet shank or winter mushroom, is an edible mushroom with a long tradition in Asian cuisine.

It is particularly striking that wild-growing and cultivated Enoki can differ significantly in their appearance.

Delicate, long and full of contrasts

In nature, Enoki usually forms more compact, yellowish to brownish fruiting bodies. Characteristic is the velvety stem, from which the German name "Samtfussrübling" (velvet shank) is derived.

Cultivated Enoki, on the other hand, often looks quite different: the fruiting bodies have long, thin, light-colored stems and small caps. This form is particularly well-known in Asian cuisine.
